These Cookie Butter No Bake Cookies are made on the stovetop (no baking required!) and are infused with decadent cookie butter flavor! A fun twist on my classic no-bake cookies!ย ย
Cookie Butter No-Bake Cookies
If you’ve never used cookie butter as an ingredient in your baking (non-baking?) before, this is the recipe you’re going to want to start with.
Cookie Butter has exploded on the baking scene over the past few years and it’s one of my favorite secret ingredients to use (maybe you tried it in my cookie butter chocolate chip cookies?) For those of you unfamiliar with what exactly cookie butter is, it’s a creamy concoction, similar in consistency to peanut butter, but made up of ground Speculoos or Biscoff cookies rather than peanuts.
Maybe you’ve tried a Biscoff cookie before (some airlines hand them out mid-flight). The taste reminds me of buttery cinnamon spiced graham crackers, and Zach said it reminded him of Snickerdoodles. There’s a faint gingery taste, and the stuff is basically just all around amazing.
Making no-bake cookies with cookie butter results in a sweet, rich cookie that almost reminds me of a candied oatmeal cookie.
Tips for Making Cookie Butter No-Bake Cookies
- You can substitute old fashioned oats for quick oats, just keep in mind the texture will be different. I personally prefer the easier to chew, softer, and more compact texture that results from using quick oats.
- Once your mixture comes to a boil,ย use a timer. You’ll need to boil for 60 seconds for perfect cookies. If you don’t boil your mixture long enough then the cookies will spill into flat puddles once you portion them out. If you boil for too long, your cookies will be dry and crumbly.
- I may call these cookie butter no-bakes “cookies”, but truly the technique is very similar to a lot of my candy recipes, and this means that the recipe is highly susceptible to humidity. If you try to make this recipe on a very humid day, the moisture in the air can affect the outcome of your cookies and keep them from setting up properly. Boiling the mixture for longer than one minute will help with this (but remember,ย only on high-humidity days!).
- There is no need to refrigerate these cookies after baking (though you can if you prefer them cold). However you prefer them, keep them stored in an airtight container and they will keep for about a week.
Follow these tips and your cookies will come out perfectly every time!
If you haven’t tried cookie butter for yourself, I recommend grabbing a jar ASAP. ย And if you end up “accidentally” eating ยพ of said jar for dinner, I totally get you.

Cookie Butter No Bake Cookies
Ingredients
- ยฝ cup salted butter cut into Tablespoon-sized pieces (113g)
- ยฝ cup whole milk (120ml)
- ยพ cup light brown sugar firmly packed (150g)
- ยพ cup sugar (150g)
- โ cup cookie butter (165g)
- ยฝ teaspoon vanilla extract
- 3 cups instant oats (285g)
Instructions
- Before beginning, line two cookie sheets with wax paper or parchment paper and set aside. Measure out your cookie butter, vanilla, and oats before beginning.
- In a medium-sized saucepan, combine butter pieces, milk, brown sugar, and sugar. Place saucepan over low heat and stirยน frequently until butter is melted.
- Once butter has melted, increase heat to medium and stir constantly until mixture comes to a boil.
- Stir constantly while boiling for one minute (I recommend using a timer! Boiling for too long or not long enough can negatively effect the outcome of your cookies, see post or notesยฒ for more details).
- Once one minute has passed, remove from heat. Add cookie butter and vanilla extract, stirring until cookie butter is completely melted and combined into mixture. Add oats and stir until completely coated in cookie butter mixture.
- Drop cookies by about 1 ยฝ Tablespoon-sized scoops onto prepared baking sheets.
- Allow to cool completely (about 30 minutes) before serving and enjoying. The cookies will firm up as they cool.

Update!!! I tried this same recipe with nutella. I added 2 more tbl spoons of butter and an extra half a cup of oats because nutella is more runny than cookie butter. They turned out excellent!!! Ty again sam!

Hello, Sam! I love your recipes. I watched this video and was wondering what you would think of adding a salty element (ie crushed up pretzels, crushed peanuts) in with the oats? I’m thinking a “take 5” candy bar angle. Can’t wait to try this recipe with my son!!

Can you tell me if by instant oats, you mean “quick cooking” oats? Which cook in 1 minute? I think most supermarkets carry Quaker Old Fashioned Oats and Quick Cooking oats. So I think this will confuse your readers. Thanks. I am going to try these with Quick Cooking oats.

I have these cooling now. I had to walk away because I am staring at them as though I expect them to do something lol. Do these eventually flatten a bit as they cool? I think that is why I find myself staring at the cookie sheets. They still have that scoop look to them on top from the cookie scoop. The last few that went onto the cookie sheet were starting to fall apart. I did set the timer for the minute once boils and have to stir, so I am hoping the falling apart is from not scooping out quick enough to the end of the batter and nothing I botched. Still have about 20 minutes left of cooling time and I’ll check on them then. They do smell good. I am definitely liking the cookie butter. I had never heard of it prior to seeing this post, so I am excited to see how these come out and some other time this week I plan on making the other no bake cookies with the cocoa powder. These are yummy. Mine didn’t exactly flatten, so thinking maybe too big of a scoop. Some flattened a bit and I can tell they were not all the same size. I was scooping and plopping but generally tried to keep the amount I was scooping same size. I think fall apart may have been wrong way to explain. I was definitely getting some crumbly pieces. And after just trying a cookie, I do have some crumbling going on but they are not dry, still very chewy and very good. Guess I’ll just have to make again until I perfect the no bake cookie art lol.
