A super fast and simple recipe for Frozen Peach Bellinis. Made with easy-to-find ingredients, these bellinis offer a frozen twist on the traditional bellini recipe, and can be ready in under ten minutes.
My introduction to Peach Bellinis came by way of a bellini bar on the beach of Punta Cana during my honeymoon. I’d never even heard of such a drink before (my local bar’s most exotic drink is probably their Long Island Iced Tea), and was a faithful Bay Breeze sipper until Zach and I happened on this tiny bellini oasis that was mostly empty (one of the benefits of visiting Punta Cana during hurricane season was that there were no crowds anywhere!).
There were bars everywhere on our resort, but nearly every day we made our way to this bellini bar to sample the different fruity flavors that the bar offered, but my favorite was consistently the Peach Bellini — specifically the frozen Peach Bellini.
Almost three years later, I thought it was time I had my own recipe.
Traditionally, peach bellinis are made with Prosecco. I prefer to make mine with Asti, which is slightly sweeter (and you know alllll about my sweet tooth), but either will work!
I also use peach schnapps in this recipe — the schnapps is also not necessarily a very traditional ingredient (this is not a purist’s bellini, but it is a good one!), but I love the flavor that it adds, as well as the extra bite! I also have a giant bottle of peach schnapps in my pantry that was left over from my wedding nearly 3 years ago, so I’m pretty happy to have a new way to use up some of that!
This was one of the easiest and fastest recipes I’d ever written, peach bellinis take literally minutes to assemble. Combine ingredients in blender. Blend. That’s it. That’s my kinda drink.
If you’ve been following along for a while you might know that I’m a big granita fan, and I included instructions at the end of the recipe on how to actually store these peach bellinis — effectively turning them into peach bellini granitas.
When I made this recipe, I was home by myself and didn’t think it was a good idea to try and finish off the bellinis on my own, so I decided I’d try storing them and freezing as a granita, it’s been a great frozen treat that I love enjoying on my patio every evening.
Peach Bellini
Ingredients
- 3 cups (454 g) frozen peach slices May substitute fresh peaches, peel first
- 1 bottle (750 ml) Prosecco or other Sparkling Wine
- ¼ cup (80 ml) Peach Schnapps
- 1 Tablespoon sugar
Instructions
- Combine all ingredients in blender.3 cups (454 g) frozen peach slices, 1 bottle (750 ml) Prosecco or other Sparkling Wine, ¼ cup (80 ml) Peach Schnapps, 1 Tablespoon sugar
- Blend well, until mixture is well-combined.
- Pour and serve.
Notes
Make it a granita
You can easily make this recipe into a granita if you would like to store it. To do this, just follow the recipe instructions and pour ingredients into a 13x9 pan and cover. Freeze, stirring well with a fork once an hour for 3 hours. It will keep covered in your freezer for several weeks, a great frozen treat to have on hand during the summer!Nutrition

Hi – since we’re coming right into peach season, can I use fresh peaches? Should I slice and briefly freeze them before making the Bellinis? I just love Bellinis! Why does anyone order anything else at brunch?

Hi Pat! This is a slushy type of drink so you wouldn’t get the same kind of texture/chill with the fresh peaches but they will work. 🙂

Hi Terrio! You could use a substitute liquor but keep in mind that the peach schnapps add to the flavor so you will be altering the flavor a bit. 🙂
