Bring salted water to a boil and with a slotted spoon gently slip eggs into the boiling water. Cook for 13 minutes . Remove from heat into the sink and drain as much hot water as possible and run cold water over them and add ice until the water is super cold. Let sit for 10 minutes or so and then crack while running under cold water and shells slip right off.

If the butter was hard to combine with the flour, then chances are your butter wasnโ€™t soft enough. I use the reverse creaming method often, and the key is having room temp, very squishable butter.

Yikes, no, I doubt they will bake well either but I am not sure what went wrong. The weight measurements are what I personally use and I haven’t ever experienced what you are describing nor had anyone else report it. Does your dough look the same as mine does in the video? All I can think is an accidental mismeasure of the flour? Otherwise I’m stumped, we make these pretty regularly here and they’re a favorite.
And the texture of scones is better without an egg which is why I do not include them, I’ve tested extensively both ways and no egg wins every time.

This is my go-to cornbread recipe. So delicious and turns out perfect even when I only have milk and have to create my own buttermilk (lemon/vinegar).

My question is –
Is it possible to substitute the buttermilk for kefir milk? I made vanilla cupcakes the other day and the recipe said I can either use buttermilk or kefir. Since I have a bottle of kefir leftover I was wondering if I could use the same substitution for other recipes that called for buttermilk. I wanted to use it for your cornbread, but if it alters the taste/texture then I will avoid it.

Hi Molly! There’s not really such a thing as a true clear vanilla extract, you’ll only find imitation which is the same as flavor. If I use clear vanilla I usually use McCormick brand, but unless I’m really going for a pure white cake I just use regular pure vanilla extract, which is what I currently use when I make this cake. These are too delicious, I’m totally addicted! They have the creamiest, most fluffy texture! I slightly reduced the sugar (like 20 g less, with the cream 10 g less) and they turned out perfect and sweet enough! I also took 300 g blueberries just bc the package was as big and I have to say I enjoy the ones with less blueberries more, since the perfect cheesecreme comes out better in these ones, so the amount in the recipe would be perfekt I think. (I made 16 muffins out of it, with german muffin tins it was perfect and filled to the very top.)

Hi Sandra! I opt for oil to keep the cake more moist, especially since the cake needs to be refrigerated. With that being said, butter will work here, but keep in mind that the cake may not be quite as moist. ๐Ÿ™‚
