Hi Sandy! So sorry for the delay…hopefully it came out okay! If this happens again in the future, you could try covering the pie with foil and placing it back in the oven. We’d recommend checking every few minutes or so to avoid overdoing it though.

I started the pie and left it in for 55 min’s. I thought it was cooked all the way but now that it has been out of the oven for 30 minutes or so I stuck a knife in it and see that it is NOT done.
Can I put it back into the oven and cook it some more??

You don’t even know! All I can say is that couldn’t believe how EVERYONE loved it. I also have to add that in the past when I make pumpkin pie, I always do half the amount of whipped cream called for because we never eat even half. But this time, half wasn’t enough! Do everything on this recipe!

Okay. Of all the things I have baked, I have never received the level of praise as for this recipe. Which is also relatively easy to prepare. And this was in a culture (Italy) where spices like Cinnamon aren’t particularly liked. A totally unexpected response. But this recipe is particularly smooth, subtle and delicate in it’s flavors and perhaps for Italian sensibilities, just perfect.

Hmm, honestly it’s hard to suggest a specific lower temperature without having some data on how it’s running, I would highly recommend getting an oven thermometer (here’s one I’ve used) and placing it in the center of your oven and then adjusting based off of that information. I’ve had ovens running over 25degreesF hotter than they said before, I know how frustrating it can be!

I do bake on the center rack and I feel really confident it is running hot. I’ve been way to nervous to adjust the temperature and not follow a recipe exactly to a tee. What would your suggestion be for a lower temperature? Really appreciated that you responded 🙂

Oh no! I’m so sorry to hear this, Kristina! Is your oven running hot? Are you baking it on the center rack? The crust shouldn’t be burning before the pie is done especially if you are covering the crust. 🙁
